*Turkey Enchiladas

This quick and easy meal is fun to make and the variety of spices makes it tasty down to the last bite.

Ingredients

3 cups turkey cooked
2 cups sour cream
2 cups cheddar cheese shredded
1 teaspoon salt
12 each corn or flour tortillas (10 inch)
1/3 cup corn oil
8 ounces green chili peppers two cans
1 each garlic minced
2 tablespoons olive oil or olive oil
2 cups onions chopped
1 teaspoon salt
1/2 teaspoon oregano
1/2 cup water
1 1/2 pound tomatoes, canned with juice stewed

Directions

Combine turkey with sour cream, cheese and 1 ts salt. Heat 1/3 c oil and dip tortillas in until soft and drain. Stuff with turkey mix and roll.

Arrange side-by-side with seam side down in shallow pan.

Turkey Sauce: Rinse seeds from chillies and chop. Saute with garlic in oil. Add stewed tomatoes, onions, 1 ts salt, oregano and water. Simmer uncovered until thick, about 1/2 hour.

Pour chilli sauce over enchiladas and bake at 350 degrees 20-30 minutes. Let set 5-10 minutes before serving.

Foolproof Chocolate Fudge

This REALY is fool-proof! I made it in about 20 minutes, let it cool, and It tasted pretty good! My wife was amazed, and my son couldn't get enough of it! I'll make it again! (Better than the beef & broccoli I was thinking of making!) TIP: Once your done mixing...don't waste any time getting it into your pan...it starts to thicken up pretty quick!
